Rawness extends to coconut water realm
Here’s another raw take on an existing category: Unoco raw coconut water, said to be taken only from young coconuts. Manufactured by Better Fresh, Ltd of Brooklyn, NY, the water is made from coconuts sourced in the Philippines. The slight pink color is said to come from a natural enzyme in the young nuts. The product is made shelf stable via high pressure/low temperature pasteurization (competitors use conventional pastuerization techniques). But even that amount of processing to extend shelf life opens up the question: How much processing can be done to a product and still call it ‘raw?’
