Innovation remains a key driver across the beverage sector, with brands increasingly looking beyond traditional category boundaries to create products that connect with changing consumer preferences.
Heritage storytelling, functionality and sustainability continue to shape new product development strategies.
Collaborations are also playing a growing role in bringing new products to market.
Partnerships between brewers, cultural institutions, celebrities, designers and ingredient suppliers are helping brands reach new audiences and create stronger points of differentiation.
Convenience remains a major theme, particularly within ready-to-drink formats and functional beverages. Consumers are seeking products that offer flavour, quality and occasion-led appeal while fitting into increasingly varied lifestyles.
At the same time, businesses are continuing to invest in strong visuals and distinctive packaging to stand out in crowded retail environments.
Battle Bayeux

Battle Brewery has partnered with the British Museum to launch Bayeux Lager, a limited-edition beer created to coincide with the opening of the Bayeux Tapestry Exhibition on 10 September 2026.
Brewed in Battle, East Sussex, just a few miles from the site of the Battle of Hastings, the beer will be available across the British Museum’s food and beverage outlets and retail stores, including as part of a souvenir gift box.
The Pilsner-style lager is brewed with Saaz, Tettnang and Mittelfrüh hops, delivering a clean, crisp and refreshing profile with low bitterness and a smooth Pilsner malt finish. Pilsner and dextrin malts add body and balance, creating an accessible and easy-drinking beer designed for exhibition visitors, restaurant guests and museum shoppers.
For Battle Brewery, the launch builds on its links to the history of 1066 and the East Sussex town that grew around the battlefield. The label features an original illustration inspired by the Bayeux Tapestry, reinterpreting its storytelling style with contemporary details.
Darren Edmonstone, owner and managing director of Battle Brewery, said the collaboration reflects the brewery’s roots in the history and community of Battle. The launch marks the brewery’s biggest collaboration to date, bringing its beers to one of the world’s most visited cultural institutions at a key moment for British heritage tourism.
Vault City Bake-Off

Edinburgh-based Vault City Brewing has launched a four-strong range of limited-edition sour beers inspired by globally recognised desserts, timed ahead of the return of The Great British Bake Off cake baking television series in September.
The Bake-Off Series has been developed in collaboration with brewing partners UCHU Brewing (Japan), Evil Twin Brewing (New York), Samata Brewing (Thailand) and Scottish brewery Azvex Brewing, with each release taking inspiration from a different sweet treat and incorporating unconventional brewing ingredients.
The series includes a beer inspired by Japanese mochi, created using around 500kg of rice to replicate the dessert’s soft texture, alongside a New York Cheesecake sour brewed with berries and rhubarb. A Thai dessert-inspired release marks the brewery’s first use of sago pearls and spirulina, while a Cranachan beer created with Azvex Brewing uses fruit and heather honey from Scottish Bee Co and has been partially aged in Speyside whisky barrels. The Cranachan release also represents Vault City’s first Barrel-Aged Smoothie Sour.
Founder Steven Smith-Hay said the project provided an opportunity to experiment with new techniques and ingredients while translating familiar dessert flavours into beer.
The range is supported by bespoke packaging designed by Edinburgh illustrator Heather Fletcher, who created hand-drawn artwork inspired by vintage travel postcards and recipe cards to reflect the international nature of the collaborations.
Signature Do It Right

Signature Brew has partnered with electronic music duo Groove Armada and regenerative farming business Wildfarmed to launch Do It Right, a Czech-style pale lager rolling out in Waitrose stores nationwide as well as the on-trade in cans and kegs.
The 5% ABV beer is brewed using Wildfarmed’s regeneratively farmed malted barley, with the collaboration bringing together brewing, music and sustainability credentials in a single launch.
The pale lager delivers fresh bread, floral hop and subtle spice aromas, alongside biscuit and light honey flavours balanced by herbal hop character and a clean bitterness.
By using grain sourced through Wildfarmed’s network of growers, the beer supports farming practices focused on soil health, biodiversity, water protection and carbon reduction. The launch reflects growing interest in regenerative agriculture within the food and drink sector, as brands look to demonstrate stronger sustainability credentials across their supply chains.
Tom Bott, co-founder of Signature Brew, described the collaboration as one of the brewery’s most meaningful projects to date, combining its long-standing links to music culture with a purpose-led approach to brewing. Waitrose beer and cider buyer Jourdan Gabbini said the launch aligns with the retailer’s focus on independent beer and sustainability, while Groove Armada’s Andy Cato, who is also co-founder of Wildfarmed, highlighted the shared aim of bringing people together while supporting farmers adopting regenerative practices.
Black Poetry RTD

Indian coffee brand Black Poetry has partnered with OPEN Strategy & Design to develop the positioning and visual identity for its entry into the emerging carbonated coffee category.
The project covers brand strategy, packaging design, visual identity and communications, helping the company establish a distinct presence in a segment that remains relatively new to Indian consumers.
Rather than drawing on the traditional cues associated with speciality coffee or ready-to-drink beverages, OPEN developed the platform “Coffee, Reimagined”, positioning the product around the idea of challenging convention while maintaining a focus on coffee craftsmanship.
This led to the creative concept of “beautiful vandalism”, which seeks to present carbonated coffee as a disruptive but purposeful addition to the category. The approach is designed to appeal to consumers seeking new beverage experiences while differentiating Black Poetry from more established coffee formats.
Saint James Mate

Saint James Iced Tea has expanded beyond its core iced tea range with the launch of Saint James Yerba Mate, a new certified organic beverage line targeting the growing functional drinks category.
Available in the US in Mango Passionfruit, Raspberry Lemon and Strawberry Tangerine flavours, the 16oz beverages contain 150mg of natural caffeine, 20-25 calories and 3-4g of sugar per bottle. The drinks are certified organic, non-GMO and use ethically sourced yerba mate from South America.
The launch marks the brand’s first move into a category outside iced tea and builds on its positioning around clean-label ingredients and premium flavour.
According to co-founder and co-CEO Brenden Cohen, the new range was developed to meet demand from existing consumers looking for a more functional beverage option, while maintaining the quality credentials associated with the Saint James brand.
To support the rollout, Saint James has launched its first national multi-celebrity marketing campaign featuring NHL player Jack Hughes, former NFL player Victor Cruz and entrepreneur Isabela Rangel Grutman. The campaign will run through autumn across out-of-home advertising, sampling activations and ambassador programmes.
Sierra Paloma

Sierra Tequila is expanding its ready-to-drink cocktail range with the launch of Sierra Grapefruit Paloma in select UK stores.
The 250ml canned cocktail joins the brand’s existing RTD portfolio and will be available from 7 September alongside Sierra Lime Margarita, marking the first supermarket listing for both products. The drinks will be stocked in 460 Morrisons stores with an RRP of £2.60 per can and included in the retailer’s core RTD multibuy promotions.
The 6% ABV Sierra Grapefruit Paloma combines bitter grapefruit and citrus flavours with cooked agave notes, while Sierra Lime Margarita offers a classic take on the popular tequila cocktail.
The launch follows growing consumer demand for tequila-based RTDs and builds on the success of Sierra’s canned cocktail range, which debuted in 2025. Sierra Paloma was also showcased at the On the Beach Festival in Brighton this summer ahead of its wider retail rollout.
