Vegetable juices are growing in popularity, as consumers seek healthier beverage alternatives and other ways of incorporating vegetables into their diets. Sweet potato juice offers a compelling option as the foundation for a more nutritional beverage with a marketable profile: over 60% of consumers see products containing sweet potatoes as more valuable than comparable products due to added nutrition. This paper presents new research on the positive health and sensory attributes of juice blends featuring sweet potato juice, as well as their positive consumer perception and market potential.
