Designed primarily for industrial bakers using dough sheets up to a width of 650mm, the Rollfix 600 was unveiled at the IBA trade fair last week and has two separate rolling speeds.
The machine is designed to help industrial bakers with more efficient processing, quicker manufacturing times and more effective and easier cleaning methods.
German firm Fritsch has increased the roller gap on the equipment to 45mm for thicker dough sheets and added a quick belt release for ease of maintenance and cleaning.
According to the company the roller adjustment also means processing times are cut, with sheeting speed increased to 56m per minute.
In addition, a slewable flour duster means that bakers no longer need to manually lift and adjust the mechanism.
Fritsch marketing manager Dieter Wolf told bakeryandsnacks.com: "This is a high level, high quality machine for premium products. It is easier to handle than previous models and the new design makes it easier to reach in and clean the equipment."
The Rollfix is capable of handling difficult, unstable doughs such as filo and shortcrusts, making it more suitable for luxury baked products.
The machine can use and retain large amounts of information, such as recipes, via a USB port which can be removed and transported. It is programmed by means of an LCD touch screen display.
