Coconut is hitting a second wave of popularity
Coconut related beverages have "a pretty robust future," predicted Canadean's Tom Vierhile, who said more firms were combining coconut oil or coconut water with other ingredients in novel ways, highlighting WheyCoco (coconut water + whey protein isolate) and Fat Water (water with nanoparticles of a medium chain triglyceride fat found in coconut oil). "Coconut is hitting a second wave of popularity."
